In order to offer the best to visitors, some foods have been very carefully replaced or substituted with ingredients known for their nutritional value. Our talented chefs consider the importance of a healthy and complete diet when creating the menus. Here are five ingredients that we have chosen to replace with a food from our &#8220;substitute pantry.&#8221;<\/p>\n<\/div><\/div>\n\n\n<!--more-->\n\n\n<div class=\"item wysiwyg component-heading\" ><div class=\"container\">\n<h3 class=\"wp-block-heading\">1. Milk<\/h3>\n<\/div><\/div>\n\n<div class=\"item wysiwyg component-paragraph\" ><div class=\"container\">\n<p>Although commonly used for breakfast or even for desserts, cow&#8217;s milk is\neasily replaceable by milks made from soy, rice, various nuts and even oats. In\nour kitchens, these &#8220;milks\u201d are derived from vegetable matter occupy a\nvery large space. This is particularly the case for coconut milk. <\/p>\n<\/div><\/div>\n\n<div class=\"item wysiwyg component-image\" ><div class=\"container\">\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/monastere.ca\/wp-content\/uploads\/old\/2019\/03\/lait-amande_1920-1024x683.jpg\" alt=\"\" class=\"wp-image-3481\"\/><figcaption> <br> Almond milk is one of the most popular milk substitutes. <\/figcaption><\/figure>\n<\/div><\/div>\n\n<div class=\"item wysiwyg component-heading\" ><div class=\"container\">\n<h3 class=\"wp-block-heading\">2. Cream<\/h3>\n<\/div><\/div>\n\n<div class=\"item wysiwyg component-paragraph\" ><div class=\"container\">\n<p>Cream is a sacred ingredient in French cuisine and for many, it would certainly\nseem difficult to replace. But think again! There are plant-based substitutes\nfor cream (similar to milk) such as soy, coconut or rice creams. You will find\nthem in our soups, sauces, desserts and other dishes. <\/p>\n<\/div><\/div>\n\n<div class=\"item wysiwyg component-paragraph\" ><div class=\"container\">\n<p>Did you know that coconut cream can be whipped for an absolutely smooth\ncream?<\/p>\n<\/div><\/div>\n\n<div class=\"item wysiwyg component-image\" ><div class=\"container\">\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/monastere.ca\/wp-content\/uploads\/old\/2019\/03\/lait-de-soja_1920-1024x704.jpg\" alt=\"\" class=\"wp-image-3485\"\/><figcaption> <br>Like almond milk, cream made from soy easily replaces cream of animal origin. <\/figcaption><\/figure>\n<\/div><\/div>\n\n<div class=\"item wysiwyg component-heading\" ><div class=\"container\">\n<h3 class=\"wp-block-heading\">3. Mayonnaise<\/h3>\n<\/div><\/div>\n\n<div class=\"item wysiwyg component-paragraph\" ><div class=\"container\">\n<p>The mayonnaise we use is actually vegan mayonnaise. It is entirely plant-based,\nand is a vegan alternative to traditional &#8220;mayo&#8221;. It&#8217;s easy to find\nin a grocery store, and recipes are also available on the Internet.<\/p>\n<\/div><\/div>\n\n<div class=\"item wysiwyg component-image\" ><div class=\"container\">\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/monastere.ca\/wp-content\/uploads\/old\/2017\/06\/basilic_1900-1024x682.jpg\" alt=\"\" class=\"wp-image-3316\"\/><figcaption> <br>Herbs, such as basil, aromatize very well a vegan mayonnaise. <\/figcaption><\/figure>\n<\/div><\/div>\n\n<div class=\"item wysiwyg component-heading\" ><div class=\"container\">\n<h3 class=\"wp-block-heading\">4. Refined Sugar<\/h3>\n<\/div><\/div>\n\n<div class=\"item wysiwyg component-paragraph\" ><div class=\"container\">\n<p>Sugar definitely adds richness to cooking. It is a sweet food and\nsometimes a little too enjoyable. It has long been used for food preservation,\nbut what about its long-term effects on health? At Le Monast\u00e8re, white sugar\ntakes several new forms. In fact, we use maple syrup, birch syrup, molasses,\nagar-agar and honey as substitutes. In Le Restaurant du Monast\u00e8re\u2019s dishes, you\nwill also find fresh fruit, dried fruit and natural juice to replace the\nrefined sugar. At the end of the day, everyone is happy!<\/p>\n<\/div><\/div>\n\n<div class=\"item wysiwyg component-image\" ><div class=\"container\">\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/monastere.ca\/wp-content\/uploads\/old\/2019\/03\/sirop-d-\u00e9rable_1280-1024x682.jpg\" alt=\"\" class=\"wp-image-3496\"\/><figcaption> <br>Maple syrup is an excellent natural substitute for refined sugar. <\/figcaption><\/figure>\n<\/div><\/div>\n\n<div class=\"item wysiwyg component-heading\" ><div class=\"container\">\n<h3 class=\"wp-block-heading\">5. Flour<\/h3>\n<\/div><\/div>\n\n<div class=\"item wysiwyg component-paragraph\" ><div class=\"container\">\n<p>Flour is another essential part of cooking, especially in pastry. Here,\nwe opt for locally supplied organic flour. Whole-wheat flour is preferred,\nyellow pea flour is used in our lunch quiches, gluten-free flour for those with\nallergies and quinoa flour for gourmet delights!<\/p>\n<\/div><\/div>\n\n<div class=\"item wysiwyg component-image\" ><div class=\"container\">\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/monastere.ca\/wp-content\/uploads\/old\/2019\/03\/quinoa_1280-1024x682.jpg\" alt=\"\" class=\"wp-image-3497\"\/><figcaption> <br>Quinoa flour can easily be used in many recipes. <\/figcaption><\/figure>\n<\/div><\/div>\n\n<div class=\"item wysiwyg component-paragraph\" ><div class=\"container\">\n<p style=\"text-align:center\">*** <\/p>\n<\/div><\/div>\n\n<div class=\"item wysiwyg component-paragraph\" ><div class=\"container\">\n<p>This list does not detract from the traditional resources used in cooking. With so much dietary diversity today, it is important to be able to make choices based on our health needs, our environment and the impact we have on the future of food.
